Grundlagen der Programmierung
Röstgewichte (1/4, 1/2, 1 lbs)
Vorgesehen sind 1/4, 1/2 und 1lbs, wobei 1lbs ~454 Gramm entsprechen. Im Gegensatz zu vielen andern Heimröstern, welche maximal 125g bis 300g Chargen pro Röstung verabeiten können, schafft der Behmor locker 450 Gramm. Mit 1/4 und 1/2 lbs ist es tendenziell so, dass die Hitze insgesamt zu hoch ist, der Kaffee zu schnell röstet und dabei die Säuren zu wenig abgebaut werden. Das Rösten mit kleineren Chargen fördert auch die Entstehung von ausgeprägten Bitterstoffen. 1 lbs ist für diesen Röster imho die ideale Menge. Mit dem Verändern des Röstgewichts kann das Röstprofil wunderbar feintgetunt werden. Verläuft die Röstung ab erstem Crack zu heftig, kann dabei die Röstmenge erhöht werden und umgekehrt. Für dunkle Röstungen hat sich gezeigt, dass 1lbs bei manchen Profilen von der Zeit her oft zu knapp bemessen ist. Weil die Gefahr der Überhitzung und deren Folgen besteht, hat der Röster vorgegebene Zeitgrenzen inne. Um trotzdem dunklere Röstung zu erhalten, wird der Röster mit oder ohne Bohnen ca. 1 bis 2 Minuten vorgeheizt (Pre-Heat).
Profile (P1-P5)
Grundsätzlich gibt es fünf Profile P1-P5, die alle einen etwas andern Temperaturverlauf während des Röstens aufweisen.
Das einzige Profil, das von Anfang bis Ende auf 100% Power röstet, ist P1 und soll laut Joe Behmor, für harte Hochlandbohnen (Hard Bean) geeignet sein. Die restlichen vier Profile teilen sich in jeweils drei Sektoren auf, dem 1st, 2nd und 3rd Leg. Der Übergang zwischen den Legs geschieht nach xy Prozent der Gesamtröstdauer. Ist P2 z.B. mit einer Gesamtzeit von 8:30 eingestellt, tritt der 2nd Leg nach 60% der Gesamtzeit, also nach 5:06 ein. P2 ist ebenfalls für harte Bohnen (Hard bean) geeignet und hat diesen speziellen Temperaturabfall nach 60% der Zeit. P3 ist für weiche Tieflandbohnen (Soft bean / Low grown) wie z.B. gewisse Brasilianischen Bohnen geeignet. P4 ist für weiche Bohnen oder Espressoröstungen geeignet und P5 sollen laut Joe Behmor für Inselkaffees bis Röstgrad City Plus geeignet sein.
Programme (A-D)
Drückt man erst die Röstmenge und dann das Profil, ist automatisch das kürzeste Programm A gewählt, was man jedoch nicht ablesen kann. Wählt man jetzt statt A das Programm B, verlängert sich die Röstzeit um einen gewissen Wert. Mit der Steigerung der Röstzeit durch die Programme steigen auch die durchschnittlichen Rösttemperaturen. Die Zeiten hängen u.a. auch von der voreingestellten Spannung (220V, 230V, 240V) ab. Bei 220V sind die Zeiten leicht länger als 'normal'.
Als Standard ist für P1 das Programm A, für P2 das Programm B, für P3 das Programm C und für P4 bzw. P5 das Programm D vorgesehen. Wichtig in diesem Zusammenhang zu wissen ist, dass sich die Legs mit der Verlängerung durch die Programme ebenfalls verlängern. Wenn z.b. bei 1/4 P2 A (8:30) bei 5:06 der 2nd Leg (70% Power) startet so geschieht das z.b. bei 1/4 P2 C (10:00) bei 6:00.
Die Programme haben insofern einen praktischen Nutzen, als dass die wichtigen Crack-Phasen auf die Rösthitze abgestimmt werden kann. Kommt z.b. bei P2 der 2nd Flag (70%) in einer Phase, wo die Bohnen noch zu wenig Hitze aufgenommen haben, wird Temperatur zu stark fallen, was nicht passieren sollte. Mit der Änderung des Programms (Bei P2 verkürzen auf A) kann das verhindert werden.
Zeitzuwachs (+/-)
Hier bestehen ziemlich grosse Missverständnisse über die Bedeutung der Tasten. Offenbar hat Joe Bemor sich ursprünglich was ausgedacht, was von den Ingenieuren nicht oder anderst umgesetzt wurde. Es gab im Handbuch Part V das Kapitel 8, wo Joe Behmor auf einen Unterschied bezüglich des Verwendungszeitpunkts der +/- Tasten hinwies. Vor dem Drücken der Starttaste sollten der Zeitzuwachs die Programme modifizieren, also mit direktem Einfluss auf die Längen der einzelnen Legs. Erfolgt der Zeitzuwachs erst nach dem Start des Röstens sollt das lediglich der 3rd Leg betreffen, der so verlänger oder verkürzt werden kann.
Ich glaube, viele nehmen an, dass sich beim Zeitzuwachs auch die Proportionen aller drei Legs ändern, was jedoch nicht der Fall ist. Egal, ob vor dem Start oder nach dem Start, der Zeitzuwachs ändert bloss das 3rd Leg. Immrhin kann damit die 3. Phase komplett ausgeschaltet oder maximal verlängert werden, indem die Zeit verringert bzw. erhöht wird.

P2

P2 ist wirklich ein sehr interessantes Programm, weil es für einen sanften Temperaturanstieg sorgt. Bedingungen sind jedoch etwas mehr als ein Pfund Rohbohnen und das Programm A wegen der tieferen Temperaturen und eine maximal verlängerte Röstzeit. Der Behmor schafft die 500 g Kaffebohnen bei 238 V gemessener Wechselpannung locker. Der Röster kann trotzdem auf 220 V eingestellt werden. Das verlängert die Röstzeit und der Sensor schützt gegen Ende (3rd leg) vor zu hohen Temperaturen.
